Ingredients
- 2 Large eggs
- 1 c. lowfat milk
- 3/4 c. sugar
- 1/4 c. flour
- 2 tbsp. butter, melted
- 1/2 teaspoon vanilla
- Nutmeg (sprinkle)
- 4 ounce. coconut (1 c.)
Method
- Blender Large eggs, lowfat milk, sugar, butter, flour, vanilla, and nutmeg.
- Blend till mixed.
- Spray pie pan (8 inch glass); pour mix into pan.
- Put coconut over top and push down with finger.
- Bake at 350 degrees for 35 to 40 min or possibly till done.
- 13 to 15 min in microwave (medium).
