Ingredients

  • 1 1/4 cups oatmeal powdered
  • 1/2 cup butter room temperature
  • 7 15/16 tablespoons granulated sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 1 vanilla bean sliced open with insides scraped out
  • 1 cup flour
  • 1 tablespoon baking powder
  • salt
  • 1 cup chocolate chips
  • 5/8 cup hazelnuts chopped

Method

  • Preheat the oven to 190 degrees Celsius.
  • The first step is to grind the oatmeal until it becomes a fine, flour-like powder.
  • In a large bowl, mix together the butter, granulated sugar, brown sugar, and egg.
  • In a separate bowl, mix together the vanilla bean, flour, baking powder, oatmeal powder, and salt.
  • Add the dry ingredients into the wet ingredients and mix until well combined.
  • Fold in the chocolate chips and chopped hazelnuts.
  • Drop rounds of dough onto a baking sheet covered with parchment paper. Leave room between cookies so they do not stick to each other while baking.
  • Bake for 10-11 minutes.
