Ingredients
- 1 pt. milk
- 1/2 c. coconut
- 2 Tbsp. flour
- 1 c. sugar
- pinch of salt
- 1 Tbsp. butter
- whites of 2 well beaten eggs
- ready baked crust
Method
- Put milk and coconut into a double boiler.
- When hot, add flour mixed with sugar.
- Add salt.
- Cook until thickened.
- Just before taking off the stove, add butter.
- Take from stove and quickly add the whites of two well beaten eggs.
- Pour into ready baked crust. Spread over the top, whites of two eggs well beaten.
- Spread thick with coconut and sprinkle with sugar.
- Place into oven and brown.
