Ingredients

  • 1 pt. milk
  • 1/2 c. coconut
  • 2 Tbsp. flour
  • 1 c. sugar
  • pinch of salt
  • 1 Tbsp. butter
  • whites of 2 well beaten eggs
  • ready baked crust

Method

  • Put milk and coconut into a double boiler.
  • When hot, add flour mixed with sugar.
  • Add salt.
  • Cook until thickened.
  • Just before taking off the stove, add butter.
  • Take from stove and quickly add the whites of two well beaten eggs.
  • Pour into ready baked crust. Spread over the top, whites of two eggs well beaten.
  • Spread thick with coconut and sprinkle with sugar.
  • Place into oven and brown.
