Ingredients

  • 3/4 c. sugar
  • 3 Tbsp. flour
  • pinch of salt
  • 1/4 stick butter or oleo
  • 2 c. milk
  • 3 eggs, separated
  • 1 small can coconut
  • 1 tsp. vanilla

Method

  • Cream softened butter
  • or
  • oleo
  • and
  • sugar; add flour, salt and vanilla Stir in egg yolks and gradually stir in milk. Cook on medium heat
  • until thick
  • and then add coconut.
  • Pour into baked 9-inch
  • pie shell. While preparing meringue, place pie in 325° oven.
  • (This
  • will prevent moisture from forming between filling and meringue when pie is finished.)
