Ingredients
- 3/4 c. sugar
- 3 Tbsp. flour
- pinch of salt
- 1/4 stick butter or oleo
- 2 c. milk
- 3 eggs, separated
- 1 small can coconut
- 1 tsp. vanilla
Method
- Cream softened butter
- or
- oleo
- and
- sugar; add flour, salt and vanilla Stir in egg yolks and gradually stir in milk. Cook on medium heat
- until thick
- and then add coconut.
- Pour into baked 9-inch
- pie shell. While preparing meringue, place pie in 325° oven.
- (This
- will prevent moisture from forming between filling and meringue when pie is finished.)
