Ingredients
- 1 c. evaporated milk
- 3 egg yolks, slightly beaten
- 1 1/2 c. coconut
- 1 c. confectioners sugar, sifted
- 1 c. sugar
- 1/2 c. butter
- 1 c. pecans, chopped
- 1 tsp. vanilla
Method
- In saucepan, combine milk, sugar, egg yolks and butter. Cook, stirring over medium heat, until thick, about 15 minutes. Add coconut, pecans, confectioners sugar and vanilla. Stir until desired consistency.
- Cool. Makes enough for one 13 x 9 cake.
