Ingredients
- 2 c. quick cooking rolled oats
- 2/3 c. flaked coconut
- 1 c. margarine
- 1 c. sugar
- 2 eggs
- 3 Tbsp. milk
- 1 1/2 tsp. vanilla
- 1 1/2 c. sifted flour
- 1/2 tsp. soda and salt
Method
- In oven, toast oats and coconut until golden brown.
- Thoroughly cream margarine and sugar.
- Add eggs, milk and vanilla.
- Beat well. Sift together dry ingredients; add to creamed mixture and blend well.
- Stir in oats and coconut.
- Drop from teaspoon 2 inches apart on ungreased cooking sheet.
- Flatten with tumbler dipped in sugar. Bake in 400° oven for 8 to 10 minutes, until lightly browned. Makes 4 dozen.
