Ingredients

  • 360 grams maccheroni
  • 3 eggs
  • 200 grams Italian sausage or any kind of sausage u have, casings removed and meat crumbled
  • 200 grams broccoli, cut into florets
  • 2 stalks of celery, sliced
  • 3 tbsp olive oil
  • 3 clove garlic, crushed
  • 3 salvia leaves
  • 1 salt, to taste

Method

  • Cook the pasta according to the packet directions, until al dente.
  • Drain and return to pan.
  • Meanwhile, cook the vegetables in boiling water for 3-5 minutes.
  • Set aside.
  • Heat the oil in a large frying pan over low-medium heat.
  • Add the garlic and saute until softened.
  • Increase the heat to medium.
  • Add the sausage meat, stirring to break up, and cook for 5 minutes, until browned.
  • Add the broccoli and celery, decrease the heat to low and cook for 10 minutes, until flavors have developed.
  • Season with salt and pepper.
  • Pour the sauce over the pasta in the pan.
  • Toss to coat while cooking for another 2 minutes in medium heat.
  • Stir the eggs with salvia leaves and a dash of salt.
  • Pour the beaten eggs over the pasta and toss to coat, stirring well to dustibute egg mixture all over the pasta.
