Ingredients

  • 2 large egg whites
  • 1/8 tsp. salt
  • 1/2 c. sugar
  • 1/2 tsp. vanilla
  • 1 (7 oz.) bag flaked coconut
  • 1/4 c. all-purpose flour

Method

  • Preheat oven to 300°.
  • Grease and flour large cookie sheet. In a small bowl, mix on high speed egg whites and salt until soft peaks form.
  • Add sugar.
  • Beat on high speed, adding 2 tablespoons at a time, beating well after each addition, until sugar is dissolved.
  • Beat in vanilla.
  • (Whites should stand in glossy peaks.)
  • With rubber spatula, fold in coconut and flour.
  • Drop coconut by level tablespoons 1 inch apart.
  • Bake 20 minutes or until lightly brown.
  • Store tightly in container.
