Ingredients
- 2 large egg whites
- 1/8 tsp. salt
- 1/2 c. sugar
- 1/2 tsp. vanilla
- 1 (7 oz.) bag flaked coconut
- 1/4 c. all-purpose flour
Method
- Preheat oven to 300°.
- Grease and flour large cookie sheet. In a small bowl, mix on high speed egg whites and salt until soft peaks form.
- Add sugar.
- Beat on high speed, adding 2 tablespoons at a time, beating well after each addition, until sugar is dissolved.
- Beat in vanilla.
- (Whites should stand in glossy peaks.)
- With rubber spatula, fold in coconut and flour.
- Drop coconut by level tablespoons 1 inch apart.
- Bake 20 minutes or until lightly brown.
- Store tightly in container.
