Ingredients

  • 1 baked pie shell
  • 3/4 c. sugar
  • 3 heaping Tbsp. flour
  • 3 egg yolks
  • 2 c. milk, scalded
  • 2 Tbsp. butter
  • 1 tsp. vanilla
  • pinch of salt
  • 1 c. flaked coconut

Method

  • Scald milk in double boiler.
  • Mix sugar, flour, egg yolks and salt together and small amount of scalded milk.
  • Mix well and add this mixture to remaining scalded milk.
  • Stir well. Cool in top of double boiler until thickened. Add vanilla, butter and coconut. Pour in baked pie shell. Top with meringue; brown.
