Ingredients
- 2 1/2 lb. split fryer, in serving pieces
- 1/4 c. lemon juice
- 1/4 c. olive oil
- 1 Tbsp. salt
- 1 tsp. pepper
- 1 Tbsp. oregano (leaf and ground)
Method
- Rinse and clean chicken; dry with paper towels.
- Mix salt, pepper and oregano together.
- Rub seasoning mix on both sides of chicken.
- Place chicken in a roasting pan with the skin up. Sprinkle mix of oil and lemon juice on top of chicken.
- Bake at 400° for 25 minutes or until golden brown.
- Turn chicken on other side and add 1/4 cup water; continue baking at 400° for another 20 to 25 minutes.
- Serve hot.
