Ingredients

  • 2 1/2 lb. split fryer, in serving pieces
  • 1/4 c. lemon juice
  • 1/4 c. olive oil
  • 1 Tbsp. salt
  • 1 tsp. pepper
  • 1 Tbsp. oregano (leaf and ground)

Method

  • Rinse and clean chicken; dry with paper towels.
  • Mix salt, pepper and oregano together.
  • Rub seasoning mix on both sides of chicken.
  • Place chicken in a roasting pan with the skin up. Sprinkle mix of oil and lemon juice on top of chicken.
  • Bake at 400° for 25 minutes or until golden brown.
  • Turn chicken on other side and add 1/4 cup water; continue baking at 400° for another 20 to 25 minutes.
  • Serve hot.
