Ingredients

  • 2 c. sugar
  • 1 c. Crisco or 1/2 c. butter and 1/2 c. Crisco
  • 5 eggs
  • 1 tsp. coconut extract
  • 2 c. flour
  • 2 tsp. baking powder
  • 3/4 tsp. salt
  • 1 c. buttermilk
  • 1 1/2 c. flaked coconut
  • 3/4 c. sugar
  • 1/2 c. water
  • 1/2 tsp. coconut extract

Method

  • Boil sugar and water for 1 minute; add flavoring.
  • Pour over cake while still in pan.
  • Let stand for 1/2 hour (sprinkle a little powdered sugar on top to keep it from sticking to plate).
  • Turn out on plate and immediately turn back on another plate so it will cool right side up.
