Ingredients

  • 1/2 lb chocolate cookies
  • 1/2 cup butter, melted
  • 1/2 tbsp powdered gelatin, bloomed for 5 mins in ice water
  • 1 lb cream cheese, at room temperature
  • 1/2 cup heavy cream
  • 2/3 cup granulated sugar
  • 1 tbsp orange zest
  • 2 tbsp orange juice
  • 1 (10 oz) can mandarin oranges in syrup, drained
  • 1 package orange gelatin dessert

Method

  • Grease and line a 10x6 inch rimmed baking tray with parchment paper.
  • In a food processor, process cookies to fine crumbs. Add butter and process to combine. Press into base of prepared pan. Chill for 15 mins.
  • Combine bloomed gelatin with 1/3 cup boiling water. Stir to dissolve. Cool slightly. Meanwhile, beat cream cheese, heavy cream, sugar, orange zest and orange juice until smooth. Add gelatin mixture and mix until combined. Transfer to prepared pan and chill for 1 hour, or until partially set.
  • Arrange mandarin orange segments over top of cheesecake.
  • Dissolve orange gelatin dessert in 1 cup boiling water. Add 1/2 cup cold water and let cool slightly. Carefully pour over mandarin orange segments. Chill for 6 hours, or overnight, until set.
  • Cut into 8 slices to serve.
