Ingredients

  • huge zucchini, cut in half lengthwise
  • 1/2 c. chopped onion
  • 1 c. chopped celery
  • 1/4 lb. sliced mushrooms (optional)
  • 1 clove garlic, minced or 1 tsp. garlic powder
  • 1 Tbsp. butter
  • 1 lb. ground beef
  • 1 (8 oz.) can tomato sauce
  • 1 c. grated sharp Cheddar cheese
  • 1/4 c. sliced pimento (optional)
  • 1 tsp. salt
  • 1/4 tsp. oregano
  • 1/8 tsp. pepper

Method

  • Saute onion, celery, mushrooms and garlic in butter.
  • Scoop out zucchini.
  • Saute this scooped portion with the onion, celery, mushrooms and garlic.
  • Add ground beef; brown.
  • Add tomato sauce, pimento, 1/2 cup cheese, salt, oregano and pepper.
  • Fill each zucchini half with mixture.
  • Sprinkle with remaining cheese.
  • Bake at 350° to 375° for about 30 minutes.
