Ingredients

  • 4 cup flour
  • 2 cup sugar divided
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1/2 cup canola oil
  • 2 cup buttermilk
  • 1/2 cup rasins
  • 3 tsp cinnamon

Method

  • preheat oven to 350F
  • in large bowl combine flour, 1 1/2 cups sugar, baking soda and ssalt.
  • in a small bowl whisk eggs, buttermilk and oil.
  • stir wet into dry until just moist.
  • stir in rasins
  • combine remaining sugar and cinnamon and set asside
  • spoon 1/2 the batter into 2 greased loaf pans
  • sprinkle 1/2 the cinnamon sugar mix over batter then top with remaining batter then remaining cinnamon sugar mixture
  • use a knife to cut thru the batter and swirl
  • bake for 55 to 60 minutes
  • cool in pan for 10 minutes then remove to wire racks to cool completly
  • you can wrap in foil and freeze for up to three months
  • to use a frozen loaf thaw at room tempurature and you're good to go!
