Ingredients

  • 1 cup warm milk
  • 2 eggs (at room temp)
  • 13 cup butter or 13 cup margarine, melted
  • 4 12 cups all-purpose flour
  • 1 teaspoon salt
  • 2 12 teaspoons cinnamon
  • 12 cup sugar
  • 1 cup of packed brown sugar
  • 2 12 teaspoons bread yeast
  • 1 package light cream cheese
  • 5 tablespoons of softened butter
  • 1 tablespoon sour cream
  • 12 teaspoon vanilla
  • 1 14 cups icing sugar

Method

  • Mix the flour, salt, and bread yeast in a bowl.
  • Then use a bigger bowl to mix the milk, eggs, and butter.
  • Combine the two mixtures and knead the dough.
  • Have the dough rest and double in size.
  • Cover with plastic wrap and set in warm place - I left the dough by the fire for 5 hours or so.
  • When dough has doubled, cover and let rest on a floured surface for 10 minutes.
  • Meanwhile, in a small bowl, mix the packed brown sugar and powdered cinnamon.
  • Roll out the dough into a 16" x 21" rectangle.
  • Spread 1/3 cup softened butter on dough surface.
  • Then sprinkle the brown sugar/cinnamon mixture all over the buttered dough.
  • Roll up the dough tightly so that you end up with a 21" roll (longer rather than fatter).
  • Pinch dough edge into roll.
  • Cut roll into 12 equal portions.
  • Place rolls in 9"x 13" casserole dish.
  • Cover and let rise for 30 minutes (I left them overnight in the fridge covered).
  • Bake at 400 degrees for 15 mins until the tops are lightly browned.
  • Mix all the ingredients for the topping together on high speed for 1-2 minutes.
  • Spread on the buns and enjoy.
