Ingredients

  • 2 lb. lean ground beef
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 2 Tbsp. chili powder
  • 1 Tbsp. oregano
  • 1 1/2 Tbsp. cumin
  • 1 tsp. black pepper
  • 2 tsp. salt
  • 1 (30 oz.) can tomato sauce
  • 1 (30 oz.) can diced tomatoes
  • 1 (30 oz.) can kidney beans with liquid
  • 1 (30 oz.) can pinto beans with liquid
  • 1 tsp. white vinegar

Method

  • Brown beef with onion in large stew pot.
  • Drain off fat, then add bell pepper and spices. Mix well. Over high heat, add remaining ingredients and stir until hot and bubbly. Reduce heat and simmer 20 minutes. Serve hot. May top with grated Cheddar cheese. Serves 15.
