Ingredients

  • 15 lb whole turkey
  • 1 stick of butter
  • 1 chopped parsley
  • 2 lemons
  • 1 olive oil
  • 1 bacon
  • 1 salt and pepper
  • 2 garlic cloves
  • 2 onion
  • 1 bay leaf

Method

  • Add salt and pepper in the cavity.
  • Cut onions in half and stuff in cavity with a whole lemon.
  • Now start making the butter.
  • Put a stick of butter in a mixing bowl.
  • Add chopped parsley, chopped garlic cloves, lemon zest, splash of olive oil and squeeze lemon juice.
  • And mix.
  • Gently loose the skin without breaking and line the inside with bay leaves.
  • Then rub butter mix on the skin and inside underneath the loose skin.
  • Gently message the entire bird with butter.
  • Place the turkey in preheated oven at 350 for 3 hours while basting every 30 min.
  • 15 min before its done add bacon strips on top of the bird.
  • This bacon will keep it moist and be used for gravy.
  • Remove the turkey and let it rest for about an hour before carving.
