Ingredients

  • 4 hash brown patties, defrosted until limp
  • 1/2 lb. bacon, cooked and crumbled
  • 1 1/2 c. cheese, grated (Swiss, Cheddar or Jack)
  • 3 eggs, beaten
  • 1 1/2 c. milk

Method

  • Preheat oven to broil.
  • Grease 9-inch pie plate.
  • Press hash browns to cover bottom and sides of plate.
  • Salt and pepper lightly.
  • Crisp under broiler 7 to 9 minutes.
  • Crumble bacon over hash browns.
  • Add 2 tablespoons diced onion if you wish.
  • Spread cheese over bacon.
  • Add milk to beaten eggs.
  • Mix well and pour over cheese.
  • Bake in 400° oven for 15 minutes, then turn oven down to 325° for 20 more minutes.
