- 1/2 c. sugar
- 1 envelope unflavored gelatin
- 1 3/4 c. milk
- 1/4 tsp. almond flavoring
- 1/4 tsp. cream of tartar
- 1/2 c. whipping cream
- 1 baked 9-inch pie shell
- 1/4 c. flour
- 1/2 tsp. salt
- 3/4 tsp. vanilla
- 3 egg whites
- 1/2 c. sugar
- 1 c. moist shredded coconut
Method
- Thoroughly blend sugar, flour, gelatin and salt in a saucepan. Stir milk in gradually and cook over medium heat until mixture boils, stirring constantly.
- Boil for 1 minute.
- Place pan in cold water. Cool mixture until it mounds when dropped from the spoon. Blend in vanilla and almond flavorings.
- Whip the egg whites, cream of tartar and the 1/2 cup sugar.
- Whip the whipping cream until it mounds. Add coconut and then add the rest of the mixture. Pile into baked 9-inch pie shell and chill for several hours. Serve with crushed strawberries or raspberries.
