Ingredients

  • 1/2 c. sugar
  • 1 envelope unflavored gelatin
  • 1 3/4 c. milk
  • 1/4 tsp. almond flavoring
  • 1/4 tsp. cream of tartar
  • 1/2 c. whipping cream
  • 1 baked 9-inch pie shell
  • 1/4 c. flour
  • 1/2 tsp. salt
  • 3/4 tsp. vanilla
  • 3 egg whites
  • 1/2 c. sugar
  • 1 c. moist shredded coconut

Method

  • Thoroughly blend sugar, flour, gelatin and salt in a saucepan. Stir milk in gradually and cook over medium heat until mixture boils, stirring constantly.
  • Boil for 1 minute.
  • Place pan in cold water. Cool mixture until it mounds when dropped from the spoon. Blend in vanilla and almond flavorings.
  • Whip the egg whites, cream of tartar and the 1/2 cup sugar.
  • Whip the whipping cream until it mounds. Add coconut and then add the rest of the mixture. Pile into baked 9-inch pie shell and chill for several hours. Serve with crushed strawberries or raspberries.
