- 2 qt. finely chopped cabbage
- 1 qt. peeled, chopped green tomatoes
- 6 medium onions, chopped
- 6 green peppers, coarsely chopped
- 6 red peppers, coarsely chopped
- 1/4 c. pickling salt
- 6 c. vinegar, divided
- 2 Tbsp. prepared mustard
- 2 1/2 c. sugar
- 2 Tbsp. mustard seed
- 1 Tbsp. mixed pickling spice
- 1 1/2 tsp. turmeric
- 1 tsp. ginger
Method
- Combine vegetables and salt; stir well.
- Cover and let stand 8 hours.
- Drain well.
- Stir 2 tablespoons vinegar into mustard. Combine mustard, remaining vinegar and remaining 5 ingredients in a large kettle.
- Bring to a boil; reduce heat and simmer, uncovered, 20 minutes.
- Add vegetables.
- Simmer 10 minutes.
