Ingredients
- 3/4 c. sugar
- 6 Tbsp. flour
- 6 Tbsp. cocoa
- 1/2 tsp. baking powder
- confectioners sugar
- 1 1/2 c. whipping cream
- 1/4 tsp. salt
- 4 eggs
- 1 tsp. vanilla
Method
- About 1 hour ahead, set out eggs.
- When ready to make cake, heat oven to 400°.
- Grease waxed paper, then line bottom of jelly roll pan (paper-buttered side up).
- Sift flour, sugar, baking powder, cocoa and salt together 3 times.
- Separate eggs.
- Beat yolks and add flour mixture. Add vanilla.
- Beat whites until stiff and fold into flour mixture.
- Turn into pan.
- Bake 12 minutes or just until cake springs back when gently touched.
