Ingredients

  • 3/4 c. sugar
  • 6 Tbsp. flour
  • 6 Tbsp. cocoa
  • 1/2 tsp. baking powder
  • confectioners sugar
  • 1 1/2 c. whipping cream
  • 1/4 tsp. salt
  • 4 eggs
  • 1 tsp. vanilla

Method

  • About 1 hour ahead, set out eggs.
  • When ready to make cake, heat oven to 400°.
  • Grease waxed paper, then line bottom of jelly roll pan (paper-buttered side up).
  • Sift flour, sugar, baking powder, cocoa and salt together 3 times.
  • Separate eggs.
  • Beat yolks and add flour mixture. Add vanilla.
  • Beat whites until stiff and fold into flour mixture.
  • Turn into pan.
  • Bake 12 minutes or just until cake springs back when gently touched.
