Ingredients

  • 1 1/2 c. hot water
  • 1 c. oatmeal
  • 2 eggs
  • 1 1/2 c. sugar
  • 1 stick margarine or butter
  • 1/2 c. unsweetened cocoa
  • 1 1/2 c. sifted flour
  • 1 1/2 tsp. baking soda
  • 1/4 tsp. salt

Method

  • Mix oatmeal and hot water; allow to stand and cool.
  • In a large mixing bowl, add eggs, sugar, butter, cocoa and oatmeal mixture.
  • Beat 3 minutes, then add flour, soda and salt; mix well. Pour into greased 13 x 9-inch pan.
  • Bake at 350° for 35 minutes. Check for doneness after 30 minutes.
  • Cool in pan.
  • Serve with vanilla ice cream or whipped cream.
