Ingredients

  • 1/2 lb. sweet chocolate
  • 6 large eggs
  • 3 Tbsp. water
  • 2 c. heavy cream
  • 6 Tbsp. sugar
  • 1/4 c. Amaretto
  • whipped cream for garnish
  • grated chocolate for garnish

Method

  • Cut chocolate into 1/2 inch pieces and place in a saucepan. Place pan in almost boiling water and cover.
  • Let chocolate melt over lowered heat.
  • Put yolks in a heavy saucepan and add the 3 tablespoons water.
  • Place saucepan over very low heat while beating vigorously and constantly with a wire whisk, being careful not to burn.
  • When yolks start to thicken, add Amaretto.
  • Continue beating until sauce is consistency of a Hollandaise sauce.
  • Remove from heat.
