Ingredients
- 1/2 lb. sweet chocolate
- 6 large eggs
- 3 Tbsp. water
- 2 c. heavy cream
- 6 Tbsp. sugar
- 1/4 c. Amaretto
- whipped cream for garnish
- grated chocolate for garnish
Method
- Cut chocolate into 1/2 inch pieces and place in a saucepan. Place pan in almost boiling water and cover.
- Let chocolate melt over lowered heat.
- Put yolks in a heavy saucepan and add the 3 tablespoons water.
- Place saucepan over very low heat while beating vigorously and constantly with a wire whisk, being careful not to burn.
- When yolks start to thicken, add Amaretto.
- Continue beating until sauce is consistency of a Hollandaise sauce.
- Remove from heat.
