Ingredients

  • 2 c. butter
  • 2 c. brown sugar
  • 2 tsp. vanilla
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 2 c. rolled oats
  • 1 pkg. (12 oz.) semi-sweet chocolate chips
  • 1 c. chopped walnuts
  • 2 c. sugar
  • 4 eggs
  • 4 c. flour
  • 2 tsp. baking soda
  • 2 c. cornflakes
  • 1 pkg. (8 oz.) coconut

Method

  • In a large mixing bowl, cream butter and sugars.
  • Add eggs and vanilla; mix well.
  • In a small bowl, combine flour, baking powder, baking soda and salt.
  • Gradually add to creamed mixture, mixing well after each addition.
  • Stir in cornflakes, oats and coconut. Stir in chocolate chips and nuts.
  • Divide dough into 6 sections. On a piece of waxed paper, shape each section into a 7 x 1 1/2-inch roll.
  • Refrigerate several hours or overnight.
  • Cut into 1/2-inch slices.
  • Place 3-inches apart on ungreased cookie sheet.
  • Bake at 350° for 13 to 15 minutes.
