- 2 c. butter
- 2 c. brown sugar
- 2 tsp. vanilla
- 1 Tbsp. baking powder
- 1 tsp. salt
- 2 c. rolled oats
- 1 pkg. (12 oz.) semi-sweet chocolate chips
- 1 c. chopped walnuts
- 2 c. sugar
- 4 eggs
- 4 c. flour
- 2 tsp. baking soda
- 2 c. cornflakes
- 1 pkg. (8 oz.) coconut
Method
- In a large mixing bowl, cream butter and sugars.
- Add eggs and vanilla; mix well.
- In a small bowl, combine flour, baking powder, baking soda and salt.
- Gradually add to creamed mixture, mixing well after each addition.
- Stir in cornflakes, oats and coconut. Stir in chocolate chips and nuts.
- Divide dough into 6 sections. On a piece of waxed paper, shape each section into a 7 x 1 1/2-inch roll.
- Refrigerate several hours or overnight.
- Cut into 1/2-inch slices.
- Place 3-inches apart on ungreased cookie sheet.
- Bake at 350° for 13 to 15 minutes.
