Ingredients

  • 3 eggs, separated
  • 3 Tbsp. flour
  • 1/8 tsp. salt
  • 1 Tbsp. margarine
  • 1/8 tsp. salt
  • 4 Tbsp. sugar
  • 1 c. sugar
  • 4 Tbsp. cocoa
  • 2 c. milk
  • 1 tsp. vanilla
  • 1/4 tsp. cream of tartar
  • 1 (9-inch) deep dish pie crust (unbaked)

Method

  • Preheat oven to 350°.
  • Place egg yolks, sugar, flour, cocoa and salt in heavy saucepan.
  • Gradually add milk; cook over low heat, stirring constantly, to full boil.
  • Remove from heat and add butter and vanilla.
  • Stir and pour into pie shell.
  • Top with meringue.
  • Bake at 350° for 10 to 15 minutes.
