Ingredients

  • 9 inch baked pie shell
  • 1 1/4 c. sugar
  • 3 1/2 tbsp. cornstarch
  • 1/4 teaspoon salt
  • 6 tbsp. cocoa
  • 2 c. lowfat milk
  • 3 egg yolks
  • 2 tbsp. butter
  • 1 tbsp. vanilla

Method

  • Stir together sugar, cornstarch, salt and cocoa in saucepan.
  • In separate bowl, blend lowfat milk and egg yolks; gradually stir into sugar mix.
  • Cook over medium heat, stirring constantly till mix thickens and boils.
  • Boil and stir 2 min.
  • Remove from heat, blend in butter and vanilla.
  • Pour into baked pie shell.
  • Add in meringue, sealing to edge of crust.
  • Bake about 10 min at 400 degrees, till lightly brown.
  • Cold and chill.
  • MERINGUE INSTRUCTIONS: Beat egg whites and cream of tartar till foamy.
  • Beat in sugar gradually, lightly beating whites till stiff.
  • Beat in vanilla.
