Ingredients

  • 2 c. flour
  • 1/2 c. sugar
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 3/4 c. roasted almonds, chopped
  • 1 egg, beaten
  • 3/4 c. orange juice
  • 1/3 c. vegetable oil
  • 1/4 c. cocoa powder
  • 1 tsp. grated orange peel

Method

  • Combine flour, sugar, baking powder and salt.
  • Stir in chopped almonds, reserving some for garnish.
  • Combine egg, orange juice and oil.
  • Stir into dry ingredients until mixed.
  • Remove half of batter; stir in cocoa and set aside.
  • To remaining batter, stir in orange peel.
  • Place paper liners in standard-size 12-muffin pan. Holding pan tipped slightly to side, spoon orange batter into one side of muffin liner.
  • Fill other side of liners with chocolate batter.
  • Sprinkle with reserved almonds.
  • Bake at 400° for 20 minutes.
  • Serve warm.
  • Makes 1 dozen.
