Ingredients
- 2 c. flour
- 1/2 c. sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 3/4 c. roasted almonds, chopped
- 1 egg, beaten
- 3/4 c. orange juice
- 1/3 c. vegetable oil
- 1/4 c. cocoa powder
- 1 tsp. grated orange peel
Method
- Combine flour, sugar, baking powder and salt.
- Stir in chopped almonds, reserving some for garnish.
- Combine egg, orange juice and oil.
- Stir into dry ingredients until mixed.
- Remove half of batter; stir in cocoa and set aside.
- To remaining batter, stir in orange peel.
- Place paper liners in standard-size 12-muffin pan. Holding pan tipped slightly to side, spoon orange batter into one side of muffin liner.
- Fill other side of liners with chocolate batter.
- Sprinkle with reserved almonds.
- Bake at 400° for 20 minutes.
- Serve warm.
- Makes 1 dozen.
