Ingredients

  • 1 cup all purpose flour
  • 1/2 cup self-raising flour
  • 1/3 cup cocoa, plus extra, to dust
  • 1/2 cup macadamias, chopped
  • 8 oz dark chocolate, chopped
  • 9 tbsp butter
  • 1 1/4 cups sugar
  • 2 None large eggs, lightly beaten
  • 1/3 cup sour cream

Method

  • Preheat oven to 350°F. Lightly grease an 8 x 12 inch baking pan and line with baking paper, extending over long sides.
  • Sift flours and cocoa together into a large bowl. Stir in nuts. Make a well in the center.
  • Place chocolate and butter in a heatproof bowl. Place over a saucepan of simmering water. Stir until mixture is melted and smooth. Remove from heat.
  • Blend sugar, eggs and sour cream into chocolate mixture. Add to flour mixture. Stir with a wooden spoon until well combined.
  • Pour mixture into pan. Spread evenly. Bake for 25-30 mins, until a skewer comes out clean. Allow to cool in pan.
  • Turn out of pan and dust with cocoa powder. Cut into squares. Store in an airtight container.
