Ingredients

  • 12 cup vegetable oil
  • 4 ounces dark chocolate
  • 2 cups sugar
  • 3 eggs, room temperature
  • 2 teaspoons vanilla
  • 1 12 cups rice flour (Rice flour mix)
  • 1 tablespoon rice flour (Rice flour mix)
  • 12 teaspoon xanthan gum
  • 14 teaspoon salt
  • 1 teaspoon baking powder

Method

  • Melt chocolate, then mix with oil and sugar.
  • Mix in eggs, one at a time.
  • Stir in the vanilla.
  • Add rice flour mix, xanthan gum, salt and baking powder.
  • Mix everything together, then place bowl in the fridge for a few hours.
  • Heat oven to 350F Form dough into small balls.
  • Place them on a greased cookie sheet (about 1.25" apart), and bake 10-12 minutes.
