Ingredients

  • 2/3 c. sugar
  • 2 Tbsp. plain flour
  • 2 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 2 c. milk
  • 1 tsp. vanilla
  • 2 squares semi- or unsweetened chocolate
  • 1 baked pie shell

Method

  • In top of double boiler (or in boiler on low heat) combine sugar, flour, cornstarch and salt.
  • Add milk gradually, blending well.
  • Cook until thick, stirring constantly.
  • Add chocolate when mixture begins to thicken,
  • stirring constantly until chocolate is blended.
  • Add small amount of mixture to beaten egg yolks.
  • Add to mixture in boiler, add vanilla.
  • Blend well.
  • Remove from heat when bubbly.
  • Cool, covered, pour into baked pie crust.
  • Add meringue.
  • Brown at 400° for about 10 minutes.
  • This is good for coconut or pineapple.
  • Omit chocolate, when mixture is thick add beaten egg yolk and vanilla.
  • Remove from heat and add 1 cup coconut or 1 small can crushed pineapple, drained.
