Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup boiling water
  • 2 cups flour
  • 1 3/4 cups sugar
  • 1 1/2 tsp. baking soda
  • 2 tbsp. baking powder
  • 1 tsp. salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp. vanilla

Method

  • Oven at 375. Do not open oven door before 20 min. or cupcakes will fall!Prepare 24 cupcakes.
  • In a small bowl, pour boiling water over cocoa. Mix and let cool almost completely.

Cool completely.Put buttercream in pastry bag and fill each cupcake. make chocolate ganache: 8 ozs.semisweet choc. 1/2 heavy cream. Heat cream until just boiling, remove and pour over and mix until smooth. Spread cupcakes with ganache.
