Ingredients

  • 2 1/2 cups self-rising flour
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking soda
  • 3/4 cup brown sugar
  • 1 cup buttermilk
  • 2 None medium bananas, mashed
  • 2 None large eggs, lightly beaten
  • 2/3 cup vegetable oil
  • 5 oz macadamias, toasted, chopped
  • 3 oz semi-sweet chocolate, grated

Method

  • Preheat oven to 350°F. Line a 12-hole muffin pan with paper liners.
  • Sift flours and baking soda into a large bowl. Stir in sugar.
  • In a large bowl, whisk together buttermilk, banana, egg and oil. Fold into dry ingredients and stir in macadamias and chocolate. Do not over mix.
  • Spoon into paper liners until each is 2/3 full. Bake for 20-25 minutes until a skewer inserted in the center comes out clean. Allow to cool, then store in an airtight container.
