Ingredients
- 6 3/4 cups tomatoes ripe saladette
- water
- chipotle chili to taste
- 1 clove garlic
- 1 teaspoon olive oil
- salt
- 16 tortillas
- 1 3/16 cups cottage cheese
Method
- In a large pot, add the tomatoes and enough water to cook them.
- Once the tomatoes are cooked, peel and seed them.
- In the blender, add the tomatoes, chipotle chili, and garlic. Puree until smooth.
- In a saucepan, add olive oil and the sauce. Season with salt and bring to a boil.
- Warm the tortillas. Fill each one with cottage cheese and roll.
- Serve the enchiladas and pour the sauce on top. Garnish to taste.
