Ingredients

  • 6 3/4 cups tomatoes ripe saladette
  • water
  • chipotle chili to taste
  • 1 clove garlic
  • 1 teaspoon olive oil
  • salt
  • 16 tortillas
  • 1 3/16 cups cottage cheese

Method

  • In a large pot, add the tomatoes and enough water to cook them.
  • Once the tomatoes are cooked, peel and seed them.
  • In the blender, add the tomatoes, chipotle chili, and garlic. Puree until smooth.
  • In a saucepan, add olive oil and the sauce. Season with salt and bring to a boil.
  • Warm the tortillas. Fill each one with cottage cheese and roll.
  • Serve the enchiladas and pour the sauce on top. Garnish to taste.
