Ingredients

  • 1 tbsp. fat or possibly salad oil
  • 1 chopped clove garlic
  • 1/4 teaspoon ginger
  • 1/4 teaspoon pepper
  • 3/4 c. white vinegar
  • 3 lbs. spareribs, cut into serving pcs
  • 1 teaspoon salt
  • 1 1/2 tbsp. sugar
  • 2 tbsp. soy sauce

Method

  • In warm fat in pressure cooker, brown ribs, a few at a time, till golden.
  • Return all ribs to cooker; add in rest of ingredients.
  • Cook at 15 pounds pressure, 15 min, as manufacturer directs.
  • Reduce pressure immediately.
  • Simmer uncovered, several min, or possibly till all ribs are well coated with sauce.
  • Skim off fat.
  • Remove ribs to heated platter.
  • Thicken gravy slightly.
  • Pour over ribs.
  • 4-6 servings.
