Ingredients
- 1 tbsp. fat or possibly salad oil
- 1 chopped clove garlic
- 1/4 teaspoon ginger
- 1/4 teaspoon pepper
- 3/4 c. white vinegar
- 3 lbs. spareribs, cut into serving pcs
- 1 teaspoon salt
- 1 1/2 tbsp. sugar
- 2 tbsp. soy sauce
Method
- In warm fat in pressure cooker, brown ribs, a few at a time, till golden.
- Return all ribs to cooker; add in rest of ingredients.
- Cook at 15 pounds pressure, 15 min, as manufacturer directs.
- Reduce pressure immediately.
- Simmer uncovered, several min, or possibly till all ribs are well coated with sauce.
- Skim off fat.
- Remove ribs to heated platter.
- Thicken gravy slightly.
- Pour over ribs.
- 4-6 servings.
