Ingredients

  • 2 c. cold cooked rice
  • 1 bunch scallions, finely chopped (green tops, too)
  • 1/2 lb. fresh mushrooms, finely chopped
  • 1/2 green pepper, finely chopped
  • 2 Tbsp. vegetable oil
  • 3 Tbsp. soy sauce or to taste
  • 1 egg, beaten
  • 1/2 c. finely chopped cooked pork or beef (I use leftover roast pork or beef)

Method

  • Saute veggies in oil until soft (do not burn).
  • Add a little more oil, if you feel mixture is too dry.
  • Add cold rice, meat and soy sauce to make rice brown.
  • Then add beaten egg and freshly ground pepper.
  • Fry another minute or two.
