Ingredients
- 2 c. cold cooked rice
- 1 bunch scallions, finely chopped (green tops, too)
- 1/2 lb. fresh mushrooms, finely chopped
- 1/2 green pepper, finely chopped
- 2 Tbsp. vegetable oil
- 3 Tbsp. soy sauce or to taste
- 1 egg, beaten
- 1/2 c. finely chopped cooked pork or beef (I use leftover roast pork or beef)
Method
- Saute veggies in oil until soft (do not burn).
- Add a little more oil, if you feel mixture is too dry.
- Add cold rice, meat and soy sauce to make rice brown.
- Then add beaten egg and freshly ground pepper.
- Fry another minute or two.
