Ingredients
- 10 lb. coarsely ground meat
- 2 Tbsp. minced garlic
- 4 c. chopped onion
- 4 to 8 chili pods (according to how hot you like it)
- 4 Tbsp. salt
- 3 qt. tomato juice
- 1 lb. cooked, mashed pinto beans
- 4 to 6 c. cracker or bread crumbs, finely crumbled
- 1 lb. ground suet
- 1/4 c. chili powder
- 4 Tbsp. cumin
- 1 Tbsp. sugar
Method
- Roll the meat in all the flour you can get to stick.
- Cook in a large pot until gray; stir often, do not brown.
- Add 3 quarts water, then add remaining ingredients through the tomato juice, cooking very slowly.
- Add the beans and crumbs last.
- Simmer in large pot or electric roaster.
- May be frozen.
- Makes 50 cups.
