Ingredients

  • 10 lb. coarsely ground meat
  • 2 Tbsp. minced garlic
  • 4 c. chopped onion
  • 4 to 8 chili pods (according to how hot you like it)
  • 4 Tbsp. salt
  • 3 qt. tomato juice
  • 1 lb. cooked, mashed pinto beans
  • 4 to 6 c. cracker or bread crumbs, finely crumbled
  • 1 lb. ground suet
  • 1/4 c. chili powder
  • 4 Tbsp. cumin
  • 1 Tbsp. sugar

Method

  • Roll the meat in all the flour you can get to stick.
  • Cook in a large pot until gray; stir often, do not brown.
  • Add 3 quarts water, then add remaining ingredients through the tomato juice, cooking very slowly.
  • Add the beans and crumbs last.
  • Simmer in large pot or electric roaster.
  • May be frozen.
  • Makes 50 cups.
