Ingredients

  • 4 lb. chicken wings
  • 1/2 c. lemon juice
  • 2 Tbsp. minced garlic
  • 4 tsp. chili powder
  • 2 1/2 tsp. salt
  • 2 1/2 tsp. pepper
  • 1 Tbsp. cumin
  • 1/2 tsp. oregano
  • 1/4 tsp. cinnamon
  • 1/8 tsp. ground clove
  • 2 tsp. onion powder

Method

  • Toss chicken wings in the lemon juice and garlic.
  • Combine the remaining ingredients.
  • Set aside 1 tablespoon spice mixture.
  • Rub the greater portion of the spices onto the wings, distributing them evenly.
  • Place the wings in a single layer to marinate 2 to 12 hours.
  • Preheat oven to 375°.
  • Remove wings from marinade and place on lightly greased foil covered rimmed cookie sheet.
  • Bake for 40 minutes.
  • Sprinkle on the reserved spices and bake another 10 minutes.
  • Nice and spicy, but not too hot!
