Ingredients
- 1 lb. mild Cheddar cheese, shredded *
- 1 lb. Monterey Jack cheese, shredded *
- 2 large cans whole chilies
- 4 eggs
- 2 tsp. salt
- 1 large can evaporated milk
Method
- Wash chilies, remove seeds and pat dry.
- Layer half the chilies, then half the cheese in pan.
- Repeat this step.
- Beat eggs, add flour, salt and can of milk.
- Beat well and pour over top of cheese.
- Preheat oven to 350°.
- Watch baking time carefully toward end as ovens vary.
