Ingredients
- 1/4 lb. margarine
- 3 eggs
- 3/4 tsp. salt
- 2 c. milk
- 1 c. biscuit mix
- 1 (4 oz.) can mild chilies, drained
- 1 lb. Monterey Jack cheese, cubed or shredded
Method
- Melt stick of margarine in shallow casserole.
- Mix melted margarine with eggs, salt, milk and biscuit mix.
- Place chilies in bottom of casserole.
- Pour egg mixture over chiles.
- Top with Monterey Jack cheese.
- Bake at 350° about 50 minutes or until brown.
- Before serving, garnish with red and green cherry peppers or a couple of slices of bell pepper.
