Ingredients

  • 1/4 lb. margarine
  • 3 eggs
  • 3/4 tsp. salt
  • 2 c. milk
  • 1 c. biscuit mix
  • 1 (4 oz.) can mild chilies, drained
  • 1 lb. Monterey Jack cheese, cubed or shredded

Method

  • Melt stick of margarine in shallow casserole.
  • Mix melted margarine with eggs, salt, milk and biscuit mix.
  • Place chilies in bottom of casserole.
  • Pour egg mixture over chiles.
  • Top with Monterey Jack cheese.
  • Bake at 350° about 50 minutes or until brown.
  • Before serving, garnish with red and green cherry peppers or a couple of slices of bell pepper.
