Ingredients

  • 1 quart. strawberries
  • 1 c. sugar
  • 3 tbsp. cornstarch
  • Juice of 1 lemon (may substitute 2 tbsp. concentrated lemon juice)
  • Cold Whip
  • Baked pie shell

Method

  • Cap and wash strawberries.
  • Put half of berries in saucepan and mash.
  • Mix sugar and cornstarch, adding to strawberries which have been mashed.
  • Add in lemon juice.
  • Cook till mix is thick and translucent/soft.
  • Cold.
  • Cut the other half of the berries in half and fold into cooked mix.
  • One hour before serving, pour into cooked pie shell; top with whipped cream and chill.
  • The combination of cooked and raw berries gives a great flavor.
