- 1 1/2 red chili beans or 1 #2 can (2 1/2 cups) kidney beans
- 1 large onion, sliced
- 1 chopped green pepper
- 1 lb. ground beef
- 3 tbsp. fat
- 1 #2 can (3 1/2 cups) tomatoes
- 1 1/2 tsp. salt
- 1/8 tsp. paprika
- 1/8 tsp cayenne pepper
- 3 whole cloves
- 1 bay leaf
- 1 to 2 tbsp. chili powder
Method
- If using chili beans, soak overnight.
- Cook in boiling, salted water until tender.
- Brown onion, green pepper, and meat in hot fat.
- Add tomatoes and seasonings.
- Simmer 2 hours, adding water if necessary.
- Add beans, heat thoroughly.
- Serves 6.
