Ingredients

  • 1 1/2 red chili beans or 1 #2 can (2 1/2 cups) kidney beans
  • 1 large onion, sliced
  • 1 chopped green pepper
  • 1 lb. ground beef
  • 3 tbsp. fat
  • 1 #2 can (3 1/2 cups) tomatoes
  • 1 1/2 tsp. salt
  • 1/8 tsp. paprika
  • 1/8 tsp cayenne pepper
  • 3 whole cloves
  • 1 bay leaf
  • 1 to 2 tbsp. chili powder

Method

  • If using chili beans, soak overnight.
  • Cook in boiling, salted water until tender.
  • Brown onion, green pepper, and meat in hot fat.
  • Add tomatoes and seasonings.
  • Simmer 2 hours, adding water if necessary.
  • Add beans, heat thoroughly.
  • Serves 6.
