Ingredients

  • 1 lb. grated Jack cheese
  • 1 lb. grated Cheddar cheese
  • 3 small cans Ortega diced green chiles
  • 4 eggs
  • 2 Tbsp. flour
  • 15 oz. can evaporated milk
  • 16 oz. tomato sauce

Method

  • Spray 11 x 13-inch glass dish with Pam.
  • Layer chiles on bottom of pan.
  • Top with Cheddar cheese.
  • Blend milk, eggs and flour. Pour over cheese and chiles.
  • Cover and refrigerate overnight. Bake 30 minutes at 400°.
  • Remove from oven, add Jack cheese and top with tomato sauce.
  • Bake 15 minutes longer.
  • Let set for 10 minutes before serving.
  • Serves 8 to 12.
