Ingredients
- 1 lb. Italian sausage
- 1 onion, chopped
- 1 c. potatoes or more, diced
- 2 carrots, sliced
- 2 celery, sliced
- 2 cans creamed corn (15 oz.)
- 1 can diced green chiles
- 2 c. milk
Method
- In a large, heavy pot, brown sausage (may use ham, chicken or kielbasa) and onion.
- Use oil, if necessary.
- Drain fat.
- Add potatoes, carrots and celery.
- Add enough water to cover.
- Cook until vegetables are tender.
- Add corn, chiles and milk.
- Heat and serve.
- Thicken with instant mashed potato flakes, if necessary. Hearty winter meal!
