Ingredients
- 2 c. chickpeas
- 1/2 lb. diced Mozzarella cheese
- 6 oz. jar roasted peppers, drained and cut into strips
- 1 c. paper thin sliced zucchini
- 1/4 c. olive oil
- 2 Tbsp. wine vinegar (to taste)
- 2 Tbsp. chopped fresh parsley
- 1/2 tsp. dried oregano
- dash of pepper
Method
- Combine all ingredients and let stand at room temperature for 30 minutes to 1 hour.
