Ingredients

  • 3 red chili peppers fresh long, coarsely chopped
  • 3 chili peppers fresh small, coarsely chopped
  • 1 shallot coarsely chopped
  • 2 cloves garlic crushed
  • 3/4 inch ginger coarsely chopped
  • 1/3 cup lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar grated, or brown sugar
  • 1/4 cup unsalted roasted peanuts finely chopped
  • 2 teaspoons oil
  • 4 chicken thighs

Method

  • For the sauce, blend or process chili peppers,, shallot, garlic, ginger, lime juice, fish sauce and sugar until smooth. Stir in nuts.
  • Heat oil in a large skillet on medium heat. Cook chicken 6-7 mins per side until cooked through.
  • Spoon sauce over chicken to serve.
