- 3 red chili peppers fresh long, coarsely chopped
- 3 chili peppers fresh small, coarsely chopped
- 1 shallot coarsely chopped
- 2 cloves garlic crushed
- 3/4 inch ginger coarsely chopped
- 1/3 cup lime juice
- 2 tablespoons fish sauce
- 1 tablespoon palm sugar grated, or brown sugar
- 1/4 cup unsalted roasted peanuts finely chopped
- 2 teaspoons oil
- 4 chicken thighs
Method
- For the sauce, blend or process chili peppers,, shallot, garlic, ginger, lime juice, fish sauce and sugar until smooth. Stir in nuts.
- Heat oil in a large skillet on medium heat. Cook chicken 6-7 mins per side until cooked through.
- Spoon sauce over chicken to serve.
