Ingredients
- 1 pkg. boneless chicken breasts
- 1/2 onion, chopped
- 2 Tbsp. olive oil
- 1 pkg. broccoli (frozen or fresh)
- soy sauce
- 1 c. uncooked rice
Method
- Cook rice.
- Cut up chicken into bite size pieces.
- Stir-fry the chicken and onion in the olive oil.
- Lower the heat.
- Add broccoli and cover, stirring occasionally.
- After the broccoli is cooked, add the soy sauce (approximately 1 tablespoon).
- Mix rice with the chicken and broccoli mixture.
- Ready to serve.
