Ingredients

  • 1 pkg. boneless chicken breasts
  • 1/2 onion, chopped
  • 2 Tbsp. olive oil
  • 1 pkg. broccoli (frozen or fresh)
  • soy sauce
  • 1 c. uncooked rice

Method

  • Cook rice.
  • Cut up chicken into bite size pieces.
  • Stir-fry the chicken and onion in the olive oil.
  • Lower the heat.
  • Add broccoli and cover, stirring occasionally.
  • After the broccoli is cooked, add the soy sauce (approximately 1 tablespoon).
  • Mix rice with the chicken and broccoli mixture.
  • Ready to serve.
