Ingredients

  • 1 cup apricot jam
  • 1/4 cup soy sauce
  • 2 teaspoons rice vinegar or apple vinegar
  • 1 teaspoon ginger grated
  • 1 clove garlic crushed
  • 1 tablespoon sauce El Yucateco habanero, or chipotle sauce
  • 1 chicken in pieces

Method

  • Preheat the oven to 180 degrees Celsius.
  • In a saucepan, warm the jam. Once it is liquid, add the soy sauce, vinegar, ginger, garlic, and habanero sauce.
  • Cook over medium heat for 5 minutes while stirring.
  • Place the chicken in a baking pan. Cover with the sauce.
  • Bake for 1 hour or until the chicken is cooked and the skin is golden brown.
  • Serve.
