Ingredients
- 1 cup apricot jam
- 1/4 cup soy sauce
- 2 teaspoons rice vinegar or apple vinegar
- 1 teaspoon ginger grated
- 1 clove garlic crushed
- 1 tablespoon sauce El Yucateco habanero, or chipotle sauce
- 1 chicken in pieces
Method
- Preheat the oven to 180 degrees Celsius.
- In a saucepan, warm the jam. Once it is liquid, add the soy sauce, vinegar, ginger, garlic, and habanero sauce.
- Cook over medium heat for 5 minutes while stirring.
- Place the chicken in a baking pan. Cover with the sauce.
- Bake for 1 hour or until the chicken is cooked and the skin is golden brown.
- Serve.
