Ingredients

  • 1 chicken breast
  • 1 medium potato, cut into 1/8-inch slices
  • 1 medium carrot, thinly sliced
  • 1 medium yellow squash, thinly sliced
  • 1 stalk celery, chopped into 1/4-inch pieces
  • 1/4 bell pepper, sliced
  • 1 small onion, sliced
  • 4 fresh mushrooms (whole)
  • 5 or 6 fresh pea pods
  • 1 tsp. butter
  • salt and pepper to taste

Method

  • On large sheet of aluminum foil, place all ingredients in center.
  • Wrap up ingredients and try to form good seal.
  • Repeat this process two more times, making sure to form good seals. Place chicken under foil directly in coals of fire.
  • Allow to cook 15 to 20 minutes on each side.
  • Take off fire and open carefully. Meal should be eaten directly from foil.
  • This recipe is for one person and provides a complete meal.
