- 1/2 c. green onions, chopped
- 2 tsp. minced garlic
- 3 c. cooked rice
- 1 1/2 c. cubed chicken breast, cooked
- 3/4 c. green chiles, seeded and finely chopped
- 6 c. chicken broth
- 1 1/2 Tbsp. lime juice (freshly squeezed)
- 1 1/2 tsp. salt
- 1/4 tsp. black pepper
- 3/4 c. chopped tomatoes
- 1 peeled and chopped avocado
- 1/2 c. cilantro, chopped
- tons of grated cheese
- tortilla chips
Method
- In a large saucepan, place 1 tablespoon oil and heat it on medium heat until it is hot.
- Add the green onions and garlic and saute them for 2 to 3 minutes.
- Add the cooked rice, chicken, chile peppers and chicken broth.
- Cover and simmer for 10 minutes.
- Add the lime juice, cilantro, salt and pepper.
- Line soup bowls with tortilla chips.
- Place cheese, tomatoes and avocado in center. Serve and add soup to bowls.
