Ingredients

  • 1/2 c. green onions, chopped
  • 2 tsp. minced garlic
  • 3 c. cooked rice
  • 1 1/2 c. cubed chicken breast, cooked
  • 3/4 c. green chiles, seeded and finely chopped
  • 6 c. chicken broth
  • 1 1/2 Tbsp. lime juice (freshly squeezed)
  • 1 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 3/4 c. chopped tomatoes
  • 1 peeled and chopped avocado
  • 1/2 c. cilantro, chopped
  • tons of grated cheese
  • tortilla chips

Method

  • In a large saucepan, place 1 tablespoon oil and heat it on medium heat until it is hot.
  • Add the green onions and garlic and saute them for 2 to 3 minutes.
  • Add the cooked rice, chicken, chile peppers and chicken broth.
  • Cover and simmer for 10 minutes.
  • Add the lime juice, cilantro, salt and pepper.
  • Line soup bowls with tortilla chips.
  • Place cheese, tomatoes and avocado in center. Serve and add soup to bowls.
