Ingredients
- 1 whole chicken or favorite pieces
- 8 oz. spaghetti
- 1 can cream of mushroom soup
- 1/2 c. milk
- 2 Tbsp. chopped pimento (optional)
- 1 small can mushroom pieces
- 1/2 c. shredded Cheddar cheese
- salt and pepper to taste
Method
- Place chicken in a large kettle.
- Add 2 quarts of water; bring to a boil.
- Reduce heat; simmer until chicken is tender.
- Take chicken from broth (reserve broth).
- Remove chicken from bone; cut in pieces.
- Cook spaghetti in broth until tender; drain well. Blend soup and milk in saucepan.
- Add chicken, pimento and mushrooms; heat thoroughly.
- Layer spaghetti, chicken mixture and Cheddar cheese in casserole dish.
- Sprinkle each layer with salt and pepper.
- Top with Parmesan cheese and cover.
- Bake at 350° for 30 to 35 minutes.
