Ingredients

  • 1 whole chicken or favorite pieces
  • 8 oz. spaghetti
  • 1 can cream of mushroom soup
  • 1/2 c. milk
  • 2 Tbsp. chopped pimento (optional)
  • 1 small can mushroom pieces
  • 1/2 c. shredded Cheddar cheese
  • salt and pepper to taste

Method

  • Place chicken in a large kettle.
  • Add 2 quarts of water; bring to a boil.
  • Reduce heat; simmer until chicken is tender.
  • Take chicken from broth (reserve broth).
  • Remove chicken from bone; cut in pieces.
  • Cook spaghetti in broth until tender; drain well. Blend soup and milk in saucepan.
  • Add chicken, pimento and mushrooms; heat thoroughly.
  • Layer spaghetti, chicken mixture and Cheddar cheese in casserole dish.
  • Sprinkle each layer with salt and pepper.
  • Top with Parmesan cheese and cover.
  • Bake at 350° for 30 to 35 minutes.
